Stir Fry - Healthy
Weekday meals in my house need to be tasty, quick and healthy. I generally buy the same batch of produce that I can use throughout the week to make various different meals. It keeps grocery shopping easy, and helps me execute tasty, healthy meals. It is all about preparation.
My go to produce list consists of bell peppers, mushrooms, broccoli, salad, zucchini every trip. When I am ready to make stir fry I will normally grab a veggie blend bag of carrots, string beans and broccoli), to that I will ad more of my own broccoli and cook it up.
STIR FRY INGREDIENTS:
1-2 teaspoons of olive oil
1/4 onion chopped
chicken breast cut into small pieces

Look at this video to see how I prepare this dish. Veggies already come prepped in bag. Onions are chopped small so they cook down and chicken breast is cut into bite size pieces. Start with olive oil, chicken and onions. Then add veggies carrots first, with chicken broth to create steam. follow with green beans and broccoli, more broth (broccoli will absorb liquid) and close lid so hot steams. I cook it on medium until veggies are to tenderness I like. Add soy sauce, salt and pepper to taste and serve over rice.
