Scalloped potato roll gets πŸ‘

Tested and Yum!

This recipe for scalloped potato roll appeared in my facebook feed so I saved it and found an occasion to use it when hosting a weekend luncheon for some ladies.

I varied the recipe by using ground chicken instead of beef to make it lighter for lunch time and served it with mixed greens. 

Couple items to watch out for

  1. I used a silicone pad under my potatoes instead of parchment paper. I suggest sticking with parchment paper, I think the silicone pad made it slide too much when rolling and paper would give a better grip like in the video.

  2. Overlap the potatoes and make sure they are pretty thin. It will make it easier to roll.

Next time I make it I will use beef for a dinner time prep, but the chicken was a huge hit. Not too heavy of a dish and easy to control portioning by cutting in half, I am adding this one to my go to folder.
