Chicken Fajitas


One of my favorites is this easy 4 ingredient fajita recipe with prep to serve time under 30 minutes. This method cooks onions, pepper and mushrooms to become soft not crunchy like traditional fajitas you get at a restaurant. It is a healthy meal with only added fat being rom olive oil. Juices that result are all from peppers and mushrooms cooking down.

Ingredients (2 servings)

  • 2 Red bell peppers (slicked in strips)

  • 1/4 white onion (sliced 1/4" thick)

  • mushrooms (slices into quarters)

  • chicken breast (cut into small pieces)

As a side dish I microwave a can of black beans.  Sliced avocado is a nice topping for each fajita taco.
